Serves 4 with leftovers
1 large onion, finely chopped
6 rashers smoked bacon, chopped
2 tins chopped tomatoes
100ml chicken stock
60g finely grated cheddar
salt & pepper
Boil pasta according to packet instructions.
Lightly fry onion and bacon.
Drain pasta and add to pan with bacon and onion.
Add tomatoes and stock and season well, simmer for 5 mins.
Sprinkle over grated cheese and finish under the grill.
