Another good week at Slimming World and weigh in again tomorrow. So fed up of being skint though, can’t wait to do a big food shop this week and stock up the cupboards! Our meal plan changed slightly last week, we ended up just having omelettes on Friday, risotto on Saturday and the turkey roast on Sunday. It was an Aldi one that comes in a tray and it was lovely, just a good size for 2 adults and 2 kids. I did the mashed potatoes with fromage frais and was pleasantly surprised that they didn’t taste any different from normal milk & butter mash!
It’s my birthday tomorrow so after weigh in I’m treating myself to a Chinese, come on I’m not the only one who does stuff like this…surely? Chicken and black bean so nothing too synful!
This weekend we have big plans. My Mum and daughter and I are going to Glasgow for the weekend to see Strictly Come Dancing Live. We are so excited and are staying in the same hotel as the cast so hoping to do some autograph hunting. We are staying 2 nights and have scoped out and booked 2 restaurants that I can’t wait to try. The first is a Japanese Teppanyaki restaurant in the Merchant City called Sapporo. I’ve only ever had Teppanyaki twice before, once in Epcot in 1996 and again in Amsterdam in 1998. I loved it and I am hoping my daughter will enjoy the theatre of it all. It may also be fairly good choice wise on Slimming World, (I hope!). On Saturday we are going to Cafe Andaluz as I absolutely love tapas, it is one of my favourite cuisines and this place is highly recommended. Next week I hope to be reporting all good things about them!
This week’s meal plan is therefore quite tame the rest of the week.

Last week’s meal plan was chopped and changed a bit because I was exploring the Slimming World website. I had a successful first week back and when I came home from my class on Tuesday night I was mega motivated. Before I started Slimming World I was really put off by the no butter/cream/olive oil etc as I do like traditional and tasty meals however I have been pleasantly surprised by some of the alternatives which haven’t compromised on taste.
I tried the lasagne from the website which substitutes a traditional bechamel white sauce with fat free natural yoghurt, eggs and nutmeg. It was really tasty. This was also syn free and I used the cheese as my Healthy extra A allowance.
I also made steak and Slimming World chips with pepper sauce which consisted of garlic, onion, mushrooms, chicken stock, Worcester sauce and fromage frais. Again syn free and very tasty.
Lastly I looked at how I could adapt my tried and tested Jamie Oliver chicken tikka masala to be as low syn as possible. I discovered that he had recipes for homemade curry paste in his Ministry of Food cookbook and I tweaked this slightly by reducing the oil content to 1tbsp of olive oil. I also replaced the tin of coconut milk with a 2nd tin of chopped tomatoes. It worked out at 1.5 syns per portion and was delicious, if not a bit spicier, nothing a dollop of fat free natural yoghurt didn’t sort out.

Feeling very sorry for myself this morning. I had my first and hopefully last kitchen injury yesterday and I’m in a lot of pain. Whilst using my mum’s new vegetable mandoline I have managed to slice the tip of my finger off.
Therefore this weeks meal plan will be somewhat limited to easy to make recipes that the kids or my husband can help with.
Monday – Pasta, Philly and cherry tomatoes
Tuesday – Omelette
Wednesday – Leek & potato soup
Thursday – Spaghetti bolognaise
Friday – Chicken curry
Saturday – dinner @ mums
Sunday – Roast Sirloin of beef (still in freezer from this week after yesterday’s plans went belly up)

It’s the time of year for considering new goals and resolutions. I only ever have two main aims in life, to be happy and healthy. Anything else is a bonus. Part of the healthy bit I guess is looking after myself, losing weight and getting fitter therefore back to Slimming World tomorrow night. I am sick to the back teeth of eating and drinking to excess after the festivities. I was considering doing a dryathlon for January but it’s my birthday at the end of the month and I’m going away for a couple of nights so I really don’t want to commit myself.
We had the usual turkey on Christmas Day with all the trimmings and steak pie on New Year’s Day. My favourite indulgences were these gin cocktails.
As per family tradition we had a pavlova which you can find the recipe for here.
I made Chicken & white wine sauce tonight from this recipe.
