Meal planning Tuesday for a change this week. My daughter started back school today so we have been enjoying the last week of the summer holidays. I took the kids to the Edinburgh Festival on Thursday. We saw to great kids shows, The Amazing Bubble Man and Albee Vector Sound Collector. Both were fab but the second one was free which is even better. We went for lunch to Quattro Zero, a little Italian which does wood fired pizzas. We had a pizza each and garlic bread to share and the bill came to just £16!!! I couldn’t believe it. Saturday we had a lovely back to school BBQ with friends.
I made pulled pork last week which fed
us for a couple of days. It’s a no syn recipe on Slimming World which makes it even better. You can have it on baked potatoes, wraps, rolls or as nachos. To make it use a 2kg pork shoulder joint and remove all visible fat. Flatten out and place in a slow cooker. In a bowl mix up a 500g carton of passata, 5tbsp Worcester sauce, 3 tbsp balsamic vinegar, 3tbsp of sweetener, 1tsp of mustard powder, 2 crushed garlic cloves and salt & pepper. Pour over the joint and cook for 8+ hours on low. Shred with 2 forks before serving. It should look like this.

Thursday – Chicken fajitas
Friday – salmon fillets
Saturday – burgers
Sunday – buffalo & cranberry pinwheels
