Back to school

Meal planning Tuesday for a change this week. My daughter started back school today so we have been enjoying the last week of the summer holidays. I took the kids to the Edinburgh Festival on Thursday. We saw to great kids shows, The Amazing Bubble Man and Albee Vector Sound Collector. Both were fab but the second one was free which is even better. We went for lunch to Quattro Zero, a little Italian which does wood fired pizzas. We had a pizza each and garlic bread to share and the bill came to just £16!!! I couldn’t believe it. Saturday we had a lovely back to school BBQ with friends.

I made pulled pork last week which fed
us for a couple of days. It’s a no syn recipe on Slimming World which makes it even better. You can have it on baked potatoes, wraps, rolls or as nachos. To make it use a 2kg pork shoulder joint and remove all visible fat. Flatten out and place in a slow cooker. In a bowl mix up a 500g carton of passata, 5tbsp Worcester sauce, 3 tbsp balsamic vinegar, 3tbsp of sweetener, 1tsp of mustard powder, 2 crushed garlic cloves and salt & pepper. Pour over the joint and cook for 8+ hours on low. Shred with 2 forks before serving. It should look like this.

We have some more veg from the garden to use up, albeit mutant looking!

Monday – chilli & prawn linguini
Tuesday – mince, tatties and mutant veg
Wednesday – leftovers
Thursday – Chicken fajitas
Friday – salmon fillets
Saturday – burgers
Sunday – buffalo & cranberry pinwheels

Cooking up a storm

Well last week’s meal plan didn’t really materialise, due to working overtime at the weekend and various other changes of plans I didn’t make Friday, Saturday or Sundays meals. Lucky all the meat was in the freezer so nothing got wasted. We stayed at my mums on Friday night and she had bought pork tenderloin on offer in Sainsburys. I can never seem to find it in our smaller, local store. We had this recipe it was delish. Wish I’d taken a photo.

I got 1k of scottish steak mince on offer in Aldi at the weekend so I made a huge batch of bolognaise in the slow cooker yesterday. It fed me and the 2 kids last night, 2 portions in the freezer and I used the rest to make a 6 portion lasagne tonight. I often batch cook at the weekend to stock the freezer and save time on busy week nights. What do you guys batch cook? The kids and I also made a batch of cupcakes which I’m sure will not be long in getting hoovered up!

Monday – Lasagne
Tuesday – pulled pork
Wednesday – leftovers
Thursday – eating out @ Edinburgh Festival with the kids
Friday – chicken curry
Saturday – eating out for our anniversary
Sunday – Veg stirfry

We really wanted to go for to Champany for a steak dinner on Saturday for our anniversary which is where we had our wedding meal but I’ve just called and it’s fully booked 😦
Going to have a google and see where else we can go.

Where has the sun gone???

BBQ’s and salads, pffft!! More like soups and stews! What has happened to all the fab weather we have been having? The last week has seen some heavy rain and the forecast looks like more to come, oh well, better plan ahead. We had a steak pie dinner tonight with broccoli and cauliflower cheese sauce with the veggies fresh from the garden, cannae beat it when it’s wet and wild outside.

Last week’s pork mince curry provided plenty of leftovers, here’s the recipe:

500g pork mince
1 diced onion
4 diced new potatoes
2 pints ham/pork stock
225g long grain rice
1 tbsp curry paste
1 pack button mushrooms
Large handful frozen peas

Dry fry the mince and onion until coloured and soft, add stock and season, add finely diced potatoes, curry paste and rice, stir well and simmer for 20 mins. With 5 mins to go add mushrooms and peas. Serve with poppadoms for scooping it all up!

This week I am taking inspiration from our holiday and making Tumbet to go with our steaks on Saturday night. I’m using a recipe from this book that I bought, I’ll let you know how it went next week.
