This week I have 0 meals planned. I have so much on I haven’t even had a chance to think. I know, I know, surely with such a busy week it would have made it easier to plan ahead and organise but to be honest I’ve totally forgotten. For that reason this week will be a combination of packed lunches, school meals and work canteen food, none of which is cheap or particularly appetising!
I thought I would share the recipe for the chilli & prawn linguini I made last week as it is simple, fast and easy to prepare for a mid week meal. I’m lucky my kids love prawns too.
I use 3/4 pack of linguini cooked to packet instructions. Whilst that’s cooking I crush 3-4 garlic cloves and finely chop 2 red chillies, seeds removed. #topcheat save time by using sainsburys frozen chilli and garlic portions. I fry the chilli and garlic in olive oil and add in 2 packs of king prawns. I turn the heat down and simmer stirring regularly. I then drain the pasta and toss with the prawn mixture and a glug of olive oil. I serve with grated Parmesan.
Last weekend I was working on Saturday, my friend came round in the evening with a bottle of Pimms and luckily I had apples, strawberries and cucumber in, to mix a lovely jug for us. She was laughing at the fact I managed to produce a huge jug and cocktail spoon from the back of the cupboard not to mention fresh mint from the garden. ‘Twas lush!
Today has been absolutely scorchio and we spent the day with lots of friends and a picnic at Linlithgow Marches, it was lovely.
Tomorrow we are having an afternoon tea at work and I picked up some of these delicious goodies from The Armadale Cheesecake Experience. I can’t wait to try them!

Last weeks meal plan and diet was a complete disaster. Mainly because I wasn’t organised enough and ended up being greedy!
We had a couple of takeaways and a freezer dive one night. I did make a healthy spag bol on Friday but that was about as good as it got.
We had my daughters first galaday rehearsal on Tuesday and the timing of it just threw me completely. Galaday countdown and preparation continued with dress fittings, hair trials and arch building as well as garden maintenance. She is so excited but I’ll be glad when it’s all over, I just hope we get good weather!
It’s been relatively nice over the weekend with a couple of really heavy showers inbetween. The kids have enjoyed some picnic lunches outdoors.
Tonight we had an Indian feast and all plates were licked clean.

Having a nice chilled Sunday night after an absolutely awesome weekend.
On Friday I was out in Edinburgh with some work friends for some real ales, gins and cocktails. Great wee day and the sun was shining. We had some immense pulled pork nachos in The Hanging Bat, a bar on Lothian Road specialising in beers on tap and gins. Then we headed down to Dragonfly for a good few Espresso Martinis…yum!!
Yesterday I was like a kid at Christmas as my 2 best friends and I were going to see The Eagles which was my birthday present from them. They didn’t disappoint and are easily the best performance I have ever seen live, that’s twice I’ve seen them now. The Hydro is an amazing venue, especially the sound.
I was tempted to give in to hangover munches today but instead decided on some nice stewed sausage and I’m so glad I did as it was lush! I browned an onion and some pork and apple sausages with an oxo cube and a heaped teaspoon of apple sauce and one of whole grain mustard. I covered with water and simmered for an hour before thickening with bisto gravy powder and serving with mash, cauliflower and carrots. I would make it this way again as the gravy was really tasty.
