Another bank holiday weekend

Tomorrow is a rare day where the kids are in school/nursery but I’m off, yippee!! I’m going to get my hair done and a few bits and pieces for our holiday, 5 weeks today…not that I’m counting!

My veggie lasagne this week went down a treat and gave me lots of leftovers for the freezer.

Aldi had lots of Old El Paso goodies on offer this week and I couldn’t resist the nacho kit. First time I’ve tried it although I do normally make nachos myself. It was yummy and the perfect Saturday night snack for watching a movie.

Wanted – someone to wire my jaws shut!

At the start of the year I joined Slimming World and in my first week I lost 5lbs. Since then I have only really been playing at it on and off and I really need to get back in to it. The thing is it’s not a hard plan to follow and it has made me change some of my eating habits for the better however my problem is vino, I just can’t say no at the weekend! I’ve got 6 weeks today until I go on holiday and I really need to get my act together…let’s see if it happens!

Here’s a photo of the risotto I made this week and my scallop, black pudding and parsnip purée dish from The Boathouse, it was lush!

I normally get a fruit and veg box delivered every 7-10 days and plan many of my meals around this. At £10 it is great value for money and the produce is amazing, here’s this weeks.

This weeks meal plan is:

Monday – Macaroni Mince
Tuesday – Chicken Kievs
Wednesday – leftovers
Thursday – Spaghetti bolognaise
Friday – Takeaway
Saturday – Veggie lasagne
Sunday – Slow cooked lamb

The macaroni mince is a pasta bake I got off the side of a tin of soup years ago but it’s really easy to make and the kids love it.

Cook 500g of macaroni for 10 mins, preheat oven to 180 and whilst pasta cooks brown 500g mince with a finely chopped green pepper. Drain pasta and add to a casserole dish along with the mince mixture, 2 tins of Campbell’s condensed soup, a liberal amount of Worcester sauce and a crushed oxo cube. Stir well to mix everything and bake in a lidded dish for approx 30 mins. Grate cheese over with 5 minutes to go and leave uncovered. You could use any veggies you have needing used up but this is the basic recipe. I’ll post a photo next week.

A day of rest

This week has been mega busy. I was off on Monday and Tuesday with the kids and we were out and about shopping. I managed to pick up everything i needed locally, from kids PJ’s to a tiara and birthday presents.

We had some fun lunches, at the kids request.

It's been a mad dash sometimes to get the kids from nursery and after school club because my husband has been away, it's made the week go so fast!

Saturday night I was at my friends house catching up with some of the girls. She has a beautiful home with a lovely fire-pit, sheltered area in the garden and we sat out until late, it wasn't cold at all surprisingly!

Tonight we had a slow cooker recipe which someone shared with me on the Facebook group – Slow cooked wonders 🙂 If you haven't joined this group I would recommend it. I've had lots of advice and lovely recipes. Tonight's was pork loin steaks with apple, cider and mustard.

A mixed bag of a week.

This week has been a bit up and down. Normal work and school/nursery routine. On Thursday night my husbands van got broken into outside the house and all his tools stolen, absolute lowest of the low who steal people’s livelihood! Unexpected expense because he had to go out and buy new ones straight away as he is away down to Sheffield to work for the week. Today however we spent a lovely day for free at our local agricultural college, Oatridge, which was having a farm open day. The kids had a ball.

Last weeks meal plan went mostly to plan, a couple of meals I have rolled over as I ate at a friends on Friday night whilst the kids were at my mums and we went for Sunday lunch today to The Bridge Inn @ Ratho. Nice meal but I ended up taking an allergic reaction to nuts which must have been in the oatcakes on my cheeseboard so it ended with a mad dash for antihistamine!!
